Italian Wheat Berry Salad

This beautiful and delicious salad is incredibly versatile.  Have it as a stand-alone salad or on top of a bed of hearty greens.  It's also fabulous with corn chips as a loose dip or as an accompaniment with grilled chicken or ribs.

ingredients

2 cups wheat berries
2 carrots, sliced into rounds
1 can garbanzo beans
1 can black olives, sliced
1/2 cup red onion, chopped
1 clove garlic, minced
3/4 cup fresh herbs, chopped (thyme, oregano, rosemary, sage, etc)
1/2 cup olive oil
1/4 cup red wine vinegar
1 tsp. sugar
Salt & freshly ground pepper to taste

Instructions

Toss all ingredients in glass or wooden bowl.  Let flavors blend for a half  hour and serve.
