Lean and Comforting Mini-Meatloafs

Mini Meatloaf

Meatloaf turns from mundane to marvelous, when you offer individual portions to each person in place of the usual slices.

ingredients

1 pound extra lean ground turkey
¾ cup old-fashioned oatmeal (uncooked)
½ cup shredded carrots
1 small tomato, seeded and finely chopped (about 1/3 cup)
¼ cup olive oil
2 teaspoons Worcestershire sauce
1 egg
1 small onion, minced
2 cloves garlic, minced
2 tablespoons fresh thyme
1 teaspoon salt
½ teaspoon ground pepper
2 tablespoons ketchup

Instructions

1. Preheat oven to 350 degrees. 

2. Gently stir together turkey, oatmeal, carrots and tomato. 

3. In another small bowl, whisk together olive oil, Worcestershire sauce and egg until well mixed.  Stir in onion, garlic and thyme, then pour over turkey mixture.  Add salt and pepper and, again, gently combine the ingredients so as to not compact the meat. 

4. Divide meat into four parts and pour into four small loaves about 4½-inches long and 2½-inches wide.  Spread ½ tablespoon ketchup on each loaf. 

5. Bake until turkey reaches 170 degrees and inside is no longer pink, about 40 – 45 minutes.
