Easy Pita Pizza

You can have home-made pizza with a whole grain crust on the table in twenty minutes, when you use whole grain pita bread for the crust. Kids love to "decorate" their own.

ingredients

1 seven-inch (15-18 cm) round of whole grain pita bread, uncut
4 oz. (125g) spaghetti sauce (enough to cover – according to taste)
1 oz. (30g) part-skim mozzarella cheese
Assorted chopped veggies (as many as possible)
A little Italian chicken sausage, chopped (optional)

Instructions

1. Preheat oven to 350°F (180°C or gas mark 4) and put pita bread on cookie sheet or perforated pizza pan.

2. Cover pita bread with spaghetti sauce and top with cheese (take it easy with the cheese).

3. Sprinkle with as many vegetables as you can fit on the surface of the pizza, along with some bits of healthy sausage (optional). If using chopped fresh spinach, put spinach under cheese so it won't dry out.

4. Drizzle with a little olive oil (optional).

5. Bake for 15 minutes or until cheese begins to brown.

Veggie ideas: I like to use red peppers, onions, mushrooms and spinach. When using chopped fresh spinach, put spinach under cheese so it won't dry out.
